2 lb. bag of confectioners sugar
4 tbsp. meringue powder
1 tbsp. corn syrup
1 tbsp. clear vanilla
½ cup warm water
Sift confectioners sugar to remove any lumps and set aside. Whisk meringue powder into warm water until frothy. Add corn syrup and vanilla . While the mixer is on low speed, slowly add the confectioners sugar. You may want to place a towel over the mixer to keep the “sugar cloud” down. Continue to mix for four minutes. Mixture will be stiff.
At this stage, you can add several drops of Wilton white food coloring to achieve a white, opaque color without having to over mix the icing. This step also helps to prevent color bleed when adding other colors.
You are now ready to add water in ¼ tsp. increments (or use a clean spray bottle filled with water) until the desired consistency is obtained. Divide into smaller bowls to add gel colors of your choice.
